TaStY FriDay..

Does this look tasty to you? I decided to make cookies last night and this is the best chocolate chip cookie recipe...I make these at christmas and if you want that extra added chocolate flavor these are the cookies for you..it made 2-1/2 dozen large cookies...I sent the DH to work with some this morning as his boss has a serious sweet tooth..and alot of the live-a-boards stop in to say hi and they can get a cookie..;)
Today is glorious..suppose to be 69 degrees..unheard of this time of year really..70 tomorrow and then back to rain and in the 50's..geezz...oh well I was out in it today picking my neighbors dandilions as they don't live there and are waiting to rent the place..so far no takers and they are on vacation..and you know how anal I am about weeds don't want those suckers in my yard..so shovel in hand and 2 hours later...I feel much better now..my yard is dandilion free at the moment and I'd like to keep it that way..I listed a whole bunch of stuff on Etsy yesterday and have a few more items to list..for the time being...I have alot of halloween stuff to list..but I really need to get my little sisters baby stuff done..and I have not done a darn thing...I hope you all have a wonderful weekend..here is the cookie recipe for you all..this was in the February 2009 country living magazine..;)
Enjoy

Chocolate chunk and cherry cookies
says it makes 4 dozen..but I wanted big cookies so I got 2-1/2..
1-1/2 cups all-purpose flour
1 cup cocoa
1 tsp. baking soda
1 tsp. salt
1 cup unsalted butter (2 sticks) I zap it in the microwave for like 30 seconds to make it soft
3/4 cup granulated sugar
1-1/4 cups firmly packed dark brown sugar..I used regular
2 large eggs
2 tsp. pure vanilla extract
1-1/2 cups chopped bittersweet chocolate..(they come in bars)
1-1/2 cups dried tart cherries (I used crazins)
Tip: Substitute dried figs, cranberries or apricots in place of the cherries for a super sophisticated cookie..

Heat oven to 350 degrees. Line baking pans with parchment paper (I just sprayed with pam) works just fine..and set aside.
Combine flour, cocoa, baking soda, and salt in a medium bowl and set aside. Beat the butter and sugars in a large bowl until light and fluffy, using a mixer set on medium-high speed. Beat in eggs one at a time and add the vanilla. Reduce the mixer speed to low and gradually add the flour mixture until combined. Stir in the chopped chocolate and cherries
(for Blonde milk chocolate and cherry cookies, omit the cocoa, add an additional cup of flour and replace the bittersweet chocolate with milk chocolate).
Shape 2 tablespoons of dough into rough balls and place them 2 inches apart on a baking sheet. Bake for 11-13 minutes ( I do mine for 11). Cool the cookies on the pan for 2 minutes. Transfer to a wire rack and let cool completely...:)

  7. Those cookies look delish! Will have to try them for the chocoholic who lives with me. Well Kiddo, if you like weedin', come on down....I noticed the dandlions in my backyard today and was so ashamed. My neighbors' yards look so much nicer, but we'll get to them eventually, unless you wanna come and do them. LOL
