Good Morning Everyone!!! I thought I would let you see what I made for dinner last night..I made a wonderful recipe that my girlfriend Lauren got from her MIL that she used to make her son Mark when he was little...A great comfort food for those chilly nights..
Bisquits and Gravy.. The photo above is what you need for the bisquits..(Full recipe to follow)..
I used about a 1/2 pound ground sausage..this recipe calls for chicken..but use what you like..so first I get the sausage browned and cooked..
Then I added the flour (forgot the butter)and it tasted just fine.. added broth and milk..stir out the lumps and let it thicken.
Meanwhile you have your flour and mix thebaking soda, cream of tartar, salt and shortening and mix together with your hands to make fine crumbs...
then add the buttermilk and stir with fork until soft dough forms..it will be sticky..thats how it is supposed to be..
I put a 1/4 cup of flour on my counter and put the dough down on it and kind of roll it around the flour so its not sticky anymore..I then just pat it down to the thickness I want which is 1/2 inch thick. mine were about a 1/4 inch thick..and cut out with a bisquit cutter..
put on an ungreased cookie sheet (you see the last one didn't get cut with the bisquit cutter..there would have been waste and no one wants waste..These will turn out so flakey and yummy..I got this recipe from an amish cookbook..so you know its good.:)
store the left over bisquits in a bowl and eat the next day..heated slightly with butter and jam...yum..I know what I am having for breakfast as soon as I am done with this post..:) Well I am off to get ready to go to Joanns....let me know what you think of the recipe...:) have a great day...:)
Bisquits and Gravy
(this is if you are using raw chicken)
put water in a pot with salt bring to a boil add chicken with more salt to taste, boil chicken for 30-40 minutes. (how much depends on how many you are making this for)...
Medium batch: 6 TBS flour 6TBS butter, 1-1/2 cups broth 1-1/2 cups milk
(you can use the broth you boiled the chicken in..I use canned broth..chicken or vegetable)
Large batch: 8TBS flour 8TBS butter, 2 cups broth, 2 cups milk
If you don't have broth use all milk.
Stir in the meat and whisk till the lumps are gone and let thicken..
Meanwhile you can whip up your bisquits
Soda bisquits
2 cups flour
1 scant tsp of baking soda
1 scant tsp cream of tartar
pinch of salt
3 TBS shortening..I used butter flavor
1 cup buttermilk
Rub dry ingredients and shortening together to make fine crumbs (I used my hands)
add buttermilk, stirring with a fork until soft dough forms. (it will be sticky)
Put a 1/4 cup flour on your work surface and spread out..put down the down and turn it all over till coated with the flour so it doesn't stick when you cut your bisquits.
Put bisquits on a baking sheet..cook at 450 degrees for 10-12 minutes or until lightly browned..these are flakey bisquits..and are so easy and simple to make..don't overwork that dough..that is what gives them their flakey quality..
