PuMpkiN ChiP MuFFinS, ToWeLs, MaGaZineS, and MoRe PuMpkiNs..oH MY..;)

Hey there everyone..it is has been a busy week..sorry for not posting as much as I do and so late in the day..but hey better late then never I always say..this is my 701th post!!
Okay on Monday I had a serious sweet craving so I baked at 9:30pm at night cause I had to fill that craving..and being in a fall mood too I made pumpkin chip muffins..and I doubled the recipe so I could give hubby some to take to work as the folks that live aboard the boats there love my baking..and I love sharing the calories too..I took some to one of the gals in our church when we went visiting on tuesday...and it was in a cake pan cause I ran out of glass muffin cups...it made about 20 muffins and an 8x8 pan of it..:) I will share the recipe at the end of the post..I have shared this several times..but it is soooo tasty and I have new followers that might want to sample the recipe..;)
Wednesday after my doctors appt..I had to wait for a prescription to be filled so I did some window shopping and then at Rite aid (not sure if you have one in your town or not) but they had a sale on their fall decorating..50% of..so I purchased 4 sets of these wonderful fall colored towels...I will embroider on these and put them on my etsy site.. and a set will go in my newly redone bathroom too.;) I already tried them on the towel rack next to the one I made and they look so good there.;)nice soft micro fiber towels..they wash up nicely too.:)
I also picked up the better homes and garden magazine as a couple of our fellow blogger and artist friends are in here and sharing patterns of things for us to make..and the magazine on the right has some wonderful recipes in it..I was reading it last night in bed...will have to share some of the recipes that I found..and they all seem to be pretty easy to make..:) I picked up some other fall type items..but they are for swaps that I am doing and I can't share with you all yet till they get their packages.;)
Yesterday I also received my giveaway winnings from Marilyn from Mt's Whimsey's..I love these little apples..but have decided to send them to my little sister as she does americana decorating and she will love these..she will get the basket too.;)
and the kitty is hanging in my craftroom for me to enjoy...looks right at home doesn't he.;) Thank you again Marilyn..these are wonderful..:)
okay a sneek peek as to what I was working on yesterday.;) more pumpkins..the lighter colored ones are actually glow in the dark..you can see the little owl has a glow about him..I need to put the tops on them and they are done..I have about 13 more to make with different designs on them..and they will go on my etsy site next weekend..;) as we are doing a celebration with the gals from OFG..but if anyone is interested in one in the mean time..let me know..:)
I am having a blast making these..they are so much fun as the pictures really pop due to the velvet.;)
Well that is it for me..going to go and sew and get some more done..
here is that recipe I promised you.:)

Pumpkin Chip Muffins

4 eggs
2 cups sugar
1 can (16 ounces) pumpkin
1-1/2 cups vegetable oil or applesauce (makes them healthier)
3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups (12 ounces) semisweet chocolate chips
In a large mixing bowl, beat eggs, sugar, pumpkin, and oil (or applesauce) until smooth..Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture and mix well..Fold in chocolate chips..Fill greased or paper lined muffin cups 3/4 full.. Bake at 400 degrees for 16-20 minutes (any fuller and you have to bake longer or they are gooey in the center)..or test until done.
Cool in pan 10 minutes before removing to a wire rack..Yield: about 24 standard size muffins.;)

Okay have a great weekend and thanks for stopping by to say hey!!!;)

  1. Those Pumpkin Chip muffins look and sound yummy. I'm always looking for muffin recipes as Rich has one or two for breakfast most mornings. I like to have a variety so he doesn't get tired of the same kind everyday. Usually I make 6-8 dozen muffins at a time and then freeze them. We set them out the night before to thaw and he reheats them in the microwave.

As usual your pumpkins are adorable. I received my Pumpkin pattern today and can hardly wait to make some.....of course mine won't be embroidered as I haven't bought an embroidery machine yet......yep I'm still thinking about buying one in the future.

  4. Gina,
congrats on your win. I love your pumpkins and those muffins look delish. There is no canned pumpkin anywhere to be found around here. I've been wanting to make pumpkin bread and a pumpkin roll but none of our grocery stores have any. They said there's a shortage of it. Have a great weekend.
    hugs,
    Pam

That black cat is just you. I really like it and what a great place to put it. Sounds like you are in the craft room a lot with your little sweet pumpkins. So kind of you to share your apples & basket with your sister. She is a lucky gal to have you for a sister. Have a great weekend. Blessings!
